I'm a decent cook, but a hopeless baker. It seems too complicated, like I'm going to poison someone.

Any tips? Whats something you recently baked and enjoyed?

here. This is the most recent thing I've baked, it's got limited amount of ingredients and should be easy even for a novice baker. Plus sablé cookies tend to be forgiving.

Baking isn't super hard, but it does require a bit more attention to the measuring of ingredients.

They have the butter, milk, egg and brown sugar to keep moisture. So they taste cakey, not dry. And yes, they are good with hot chocolate or coffee.

I like to bake things cupcake style and freeze them for individual desserts

so far I've got down chocolate cake, key lime pie, carrot cake, cheese cake

what other cupcake things could I make?

Sure. These are a type of Devonshire/Cornish quick scones.
You can scale this recipe for larger batches. This makes four scones.
Flour, 1 cup
Salt, a pinch
Sugar, 1-2tbsp
Bicarb, a half tsp
Egg, 1 large (50-60g)
Oil or melted butter, 1tbsp
Vinegar, 1tbsp
Wholefat milk, 5tbsp plus one extra if necessary

Put oven to hottest setting; meanwhile, whisk together all dry ingredients.
In a separate bowl, beat together all wet ingredients save the extra tbsp of milk.
Make a well in the centre of the flour mixture and pour in the wet mixture.
Combine wet and dry into a wall-paper paste consistency, adding the extra milk if it's too dry; do not overmix.
Divide into four equal portions.
Wet your hands and roll a portion into a ball and place it onto baker's parchment on a baking sheet; repeat for the remaining four portions.
Place into the oven then lower the temp to 190°C/375°F (you may have to adjust the temperature for your oven as I find some ovens do fine at lower temps and some need even higher ones) for about 18-22 minutes.

If your oven goes to 4 kajillion degrees, set it to 4 kajillion degrees. It takes about 8 minutes to measure everything and mix it together and hotting up the oven at its highest temperature allows you to pop them in just as you're done placing them on the sheet without having to wait.
