The beans cost less than the water they were brewed in, the pot has been burnt to hell and back, and I watched the waitress spit into the mug tableside. Dark roasts were advertised to hell and back so as to be able to sell sub-par beans to consumers who don't know better by burning them past the point of being able to tell the quality of the beans.

Try steeping a coarsely ground light roast for 3 minutes in a French press with a high coffee-water ratio. It'll come out almost a golden brown and has an amazingly smooth flavour to it. Even people who don't like coffee like it.

That's not true
Or at least, not entirely true. Around here black coffee is coffee without dairy, but it says nothing about how much sugar you want in it. If you wanted to order a coffee without dairy but with sugar, you'd have to say "one black coffee, two sugars". I won't say you're totally wrong because I don't know how it is in other parts of the country, but it isn't how you said where I live.

Dark roasts aren't coffee so much as they're char. The flavor you're drinking is essentially tar with some lingering coffee tannin. Though that's not to say nobody likes that sort of thing, because drinks that are specifically tar-flavored actually exist.

It doesn't really matter what variety of bean is used in the roast when you go dark because all of its unique characteristics have been destroyed.

The big chain coffee shops love this and push it onto consumers because it means they can use the cheapest, most tasteless beans they want and it'll all be the same in the end when they turn it into charcoal.

One of the reasons you need to use a dark roast in an espresso machine is because it has few acids and bitter compounds left intact for the high pressure process to force out of the grounds, so the resulting shot isn't overwhelmingly bitter.

If you keep roasting to french roast darkness and beyond though, you start creating a lot of phenols and terpenes which are a different kind of bitter than the natural acids and tannins in the bean that you destroyed getting to an espresso roast.
