Being an employee I can tell you that you can have extra anything except for meat and guac, there really is no limit. We have a group of dominicans that come in twice a day and get four scoops of white rice, carboloading for baseball practice I suppose... Additionally, you can also get as many tortillas as you want. Literally as many as you feel confident in asking for. We had a woman come in and order seven side tortillas and a cup for water. And we gave it to her... for free...

The only assholes I come into contact with are the ones who order a quesarito at peak hour when the line is out the door, then tell you that they can't have gluten. If you don't do that, you're golden and the staff won't get mad.

I completely agree, but the difference is that no matter how intelligent, articulate, and good-reference-laden you are, no one's going to hire you to build a bridge if you don't have the proper degree. STEM degrees are in much higher demand, so you can afford to be a little less polished.

You must realize that even if you make a large amount of money, you're an exception. Many liberal arts/humanities majors aren't nearly as lucky.

For instance I get a barbacoa bowl with white rice, black beans and veggies. Then ask for corn salsa and hot salsa (even though the hot salsa sucks it adds some needed spice). Then no sour cream, lots of cheese, and a little bit of lettuce.

Don't sound greedy, don't ask for tons of everything, and don't use the word extra. And you'll get exactly what you want. Except pussy.
