I just bought a bag of masa that was on sale. Unfortunately, the expiration date is 12/23/2013.

Until then, I'd love for anyone to share their favorite (family recipes would be awesome, seriously) tamale recipes, or maybe even pupusa recipe. Perhaps any recipe that involves masa!

Thanks in advance.

Masa doesn't really go out of date. Just keep it in a cool dark, dry place.

Not sure if this would work, but you might try making boudin, but replacing the rice with masa.

do you mean masa or masa harina? one is a wet dough. the other is a dry powder.

Oh sweet. Thanks

I never had boudin before

I have the dry stuff

No one ever really buys the wet stuff. It's safe to assume for someone asking for recipes that its the dry stuff.

Expiration dates are kind of bullshit, something devised to avoid lawsuits.

They are "best buy" dates, not "expiration dates". People tend to confuse the two for some reason. They just mean the product will be at its peak and not yet declining in quality until around the specified date. After that date, they do not guarantee the quality of the product.

i was unaware. i seldom see the dough for sale, you see, but i didn't want to assume my experiences with this were universally true and thought it best to get some certain clarification.
