Cajun-creole: etoufee, jambalaya, gumbo, all of it.
Slow-smoked barbecue, especially pork and brisket.
Tex-Mex: burritos, tacos, enchiladas.
Southern country-style: chicken-n-dumplins', buttermilk fried chicken w/ mashed potatoes, pork chops w/ greens, you name it.

Revival would imply that it was gone for a while. I'm in fucking California and I can get chicken fried steak, biscuits and gravy, corn bread, grits, jambalaya, cajun style seafood and a host of other "southern" foods for as long as I can remember. oh god this feel. That's exactly how it is in Montreal. I mean I usually don't care much for being served with ethnics associated with the cuisine in question (unless it's chinks fucking up over countries food, that's pretty horrible), but it's getting ridiculous. Every southern place in here is manned by hipsters for upper middle whites. The servers are all rockabilly tattooed grills, and it seems like the kitchen staff are sometimes clueless or serve watered down food. It's not like I'm asking for a crusty old black guy named Bubba to be manning the pit, but I believe one recent joint that opened had management that were closely tied to Epic Meal Time. And the prices are atrocious in here.

This Cajun place that gained a good amount of attention, it was owned and run by this guy named Rene. On the joints website and facebook, they insist so much on how this guy is actually from New Orleans and how he got all his recipes from legit experience and what not. But apparently he has an advisor who has a ridiculously watered down/at upscale price Cajun restaurant and I dunno if he is the reason why the quality of Rene's restaurant has suffered, but it's definitely watered down as well. He seems like a nice dude though. And it's got a nice atmosphere at the joint, with a live band playing everyonce in a while Mardi Gras music and nice but overpriced cocktails.

probably a "chinese" place but I've been below the boarder enough to know better than to get ripped off by a Mexican place. Mexican food at home is almost always more authentic. I'm not going to a restaurant to get skirt-steak slathered in sauce from a can and served on a cysco tortilla. Chinese is different everyone knows even from childhood this is not what Chinese people eat it's not trying to be dignified or cultured. It's just trying make Americanized food with a theme.
