I need to learn to cook vegan food quickly. I've been cooking for a while and am pretty confident in my abilities but I'm completely lost when it comes to vegan food.

vegans tough with the lack of dairy, hopefully your grocery store has some vegan baked goods. Then you've got fruits and vegetables, grains, legumes. There's soy milk and almond milk, and vegetable oil is still useable. So still got fries, and onion rings, fried pickles. Roasted vegetables:potatoes, carrots, broccoli, onions, tomatos. Speaking of tomatoes you got salsa and chips.

I have these moments where I lash out at other people for the slightest of things. Usually strangers, but sometimes I do it to those I love. It has caused complications in various relationships in my life. I'm getting help. My therapist believes it stems from the time my uncle took me on a fishing trip for a weekend. Just me and him. But seriously dude, never thought of stir-fried veg with rice? Pasta with a tomato sauce? Both regular everyday food, both acceptable dishes for a vegan.

Here's a basic stir-fry to get you started:
onion
ginger, finely chopped
garlic, finely chopped or crushed
broccoli or celery
carrot
Chinese leaf or wilted cabbage
light soy sauce
toasted sesame oil
five-spice powder if you can get it, white pepper, fennel seed and cinnamon if you can't
a little sugar
maybe a pinch of salt

The rice should be cooking while you prep your veg, there's plenty of time even with white rice (more time if you use brown).

Chop the veg into pieces approximately the same size, but the carrot can be sliced more thinly if you like. If you want to give it a head start microwave it for a short time just before use.

If you don't have a wok and a good gas burner, you want to pre-heat a good heavy pan until it's very hot (so not a Teflon-coated pan). Whatever ring or burner you're cooking on should be at its highest setting throughout the cooking. Pour in 2 tbsp of a cooking oil with a high smoke point to the wok/pan. Peanut oil is traditional, but hard to get and expensive. Rapeseed oil works well, so does sunflower oil. Don't use olive oil.

When the oil just starts to smoke (should be nearly immediately if the pan is hot enough) put the onion, garlic and carrots in and stir like crazy. After maybe 30 seconds add all of the rest of the veg and the garlic. Continue stirring — remember, this is a stir-fry, the food shouldn't sit still in the pan.

After maybe 1-2 minutes of cooking add a pinch of five-spice (or a mix of the spices listed) and the sugar, stir for a few seconds just to mix well then add a couple of dashes of soy and stir some more. You can take the pan off the heat now. Taste a bit of the veg, a bit bland sprinkle on a pinch of salt. Now add the toasted sesame oil to taste, if you're not used to the flavour add just a dash, two at the most. If you like it a lot like many Chinese cooks do you can add quite a bit, maybe as much as a teaspoon.

Portion the rice onto two warm plates, veg on top, enjoy.
