Because we use the word cider to refer to unfiltered apple juice. Alcoholic cider is known as hard cider.

Given that I tend to dislike most alcoholic beverages I have never had to put myself into such conversation. Generally when I hear sparkling apple cider, I think Martinelli's, when I just hear apple cider, I think of Ryan's, and when I think of hard apple cider I think of the various alcoholic ciders without discrimination as to whether or not they are carbonated.
