hey /ck/ how do I make a mean omelet?

Let us hear your omelet recipes.

Mines:

2 eggs
a little bit of milk
salt
pepper
onion
cooked in olive oil

I just made an omelet 10 minutes ago. Oiled up the pan, cracked 3 eggs in a bowl and beat well. I had in the fridge a veg mix made of peas, onion and peppers and after throwing the egg mix in I moved the half-cooked egg around to make sure it was evenly done.

I added a handful of veg, arranged it over half the omelet and grated cheese over it. I added lemon juice and white pepper. The lid came off the white pepper and that shit went all over the omelet. I got a couple of spoons and got as much off there as I could, then added more veg and cheese since a lot had been taken off as I tried to get the white pepper off.

I'm eating it right now with a shitload of water because every now and then I get a clump of white pepper in my mouth and it's fucking strong.

made one for breakfast this morning

beat 3 eggs with some salt and pepper in a bowl
butter in the pan
pour those eggs in (pushing towards the middle for the first 30 seconds-minute or so)
add onions, rosemary ham (from trader joes) and cheese on top
flip it on top of itself
flip the whole thing
eat with ketchup

Diced the following veg..
Onions
Orange Peppers
Courgette
Spring Onion
Sweetcorn

Then added the curry from last night (chicken coconut curry with chickpeas)

I do not add any salt because I love throwing hot sauce on my eggs, so that adds all the additional salt I need.

Just made this for lunch. First time attempting a French omelette Jacques pepin style. I made mine with only two eggs and chives with green onions on sliced tomatoes on the bottom, grated sharp cheddar on top. It was magnificent.

I like to keep it simple mostly.

3 eggs
small amount of milk
fresh coarse black pepper
salt
some fresh basil, parsley or chives
beat that shit like Rodney King
pour into pan and stir quickly to form fine curds
just before it browns fold it
take it off the heat while the center is still creamy

I remember seeing a pretty good omellete style done on that Cooking With Dog youtube channel.

The basic idea was making thin layers of omelette, then rolling it over to one end of the pan (rectangular pan preferably)
Then you add more to the pan, repeat until you get a nice omelette roll.

I feel it works better this way because it gets more evenly cooked than just throwing it on there and letting nature take its course with it.

And of course, add some herbs and spices. Even some sauces, curry goes well with it, Soy too.
Even a smooth cheese sauce, or grate cheese in between layers, or just on top of it.
One thing I always love with cheese is making sure it is near freezing cold so it has a contrast of temperatures and texture. So good. Especially with fries. My friend hates that I grate cheese next to fries instead of on them. I like both methods, on or off.

But yeah, look up that video if you want to see it in action, I need to go now. Have fun experimenting with omelettes.

That's it. High heat, keep it moving, you've got a perfect soft omelet.

Okay, on occasion I like an omelet that's a little harder, like what you get at a restaurant. In those cases, I like to add cheese (whatever I have on hand that melts well), onions, mushroom and tomato. But the unyielding rule for a really good omelet is to KEEP IT FUCKING SIMPLE. I hate it when my friends invite me to a breakfast plate and their omelet page is complicated as hell.

i use 3 eggs beaten with salt and pepper and occasionally a bit of milk depending on how im feeling. once it's almost done cooking on top ill add onions and peppers and sometimes meat if i have it(bacon or ham or whatnot), then before i close it i add cheese.
