How long, theoretically, could I marinate mushrooms in olive oil? Four, five days maybe?

Hmm yeah I once ventured into preserving garlic cloves in oil after buying some delicious spiced garlic on oil while visiting spain and not being able to find them again in the north.
In the end I was detered by the risks involved.
Home made pickled garlic is grrrreat though.
