I'm not a big Chipotle fan, but I do work for them. Today they told me to tell you I test-tried their new marinaded tofu "sofritas" option in SF (look a cool looking hipster city!) today, and damn is it good.

All their stores in northern California offer it now. Rest of their stores will probably follow suit.

Tofu is far more absorbent than meat, so it works better for deep marinading.

Indian food that marinades tofu in strong tomato sauces in the best example of this. Can't get that same flavor intensity with meat.
