I'd like to thanks hearts, dogsforfinner and everyone else involved for making me lose my mind, I pondered long and hard for a few days and could only reach one conclusion: FOCK ramen. >Here we go, /ck/! My entry for round 3, Ramen Insanity.
>AKA TONKOTSU RAMEN WITH MAYU (spicy Tonkotsu Ramen with Black Garlic Oil)
>To give you some background info, I decided to make my favorite ramen from scratch, to try and duplicate the kind I get when I go to my local ramen house. I've never, ever made ramen from scratch before, so it was sort of a personal challenge for myself to see if I could do it. I didn't make the noodles themselves from scratch, because not only do I not have a pasta roller, or enough counter space to do it by hand, but my local asian market sells fresh ramen noodles, so I used those. Everything else was made from scratch by little old me. We already ate it, and the family said it was "freakin' awesome". I was pleased. The amounts shown fed three people, with leftovers.

Anon: your vertical is clearly made for people with a large screen... And without having to open it up in whatever-other.exe, it is pretty difficult to read the text, let alone view the images.

What, entries ended on Sunday now instead of Thursday? I didn't have time to participate in the previous round (because a trip to the fresh fish market is long), but I got totally hyped up when I saw theme Ramen on the blog, which is something I cook often... I didn't notice the new dates though. I planned to buy ingredients the first thing tomorrow after Easter and cook it by Wednesday. I tried to achieve that somewhat murky quality one usually sees in ramen with blood oranges and gooseberry syrup. Oh,my entry is Chocolate Ramen,in blood orange, ginger and gooseberry broth, served with orange slices. Served cold, mint for decoration. I wanted to make a recipe all by hand. I hope you like it.

I estimate there was about a cup and a half of broth. The bowl was huge and I was afraid of drowning everything else.

I can assure you they were neither tough nor stuck together. You can see the loose webbing in this picture after they came out of the fryer. The taste and texture of the fried noodle was like the deep fried noodle dishes you can get at some Chinese restaurants, that kind of look like a nest with a stir fry in the middle. In the broth, the noodles behaved exactly like instant ramen.

This was the hardest dough I've ever made, and I mean that literally. It's so dense, dry, and crumbly that it makes me wonder how the hell anyone could make it without a pasta machine. When I was making it, I was more worried about it crumbling to dust then sticking.

Here is my spicy ramen with egg and steak.

I don't have access to a computer to do a vertical so I know it will affect my score. This dish is really simple and only consists of three ingredients. I used Shin ranyum ramen, boiled them in a pot. Fried two eggs and BBQ'd a cut of steak to add on top. The meat was medium well and really tender, the noodles and egg went well together. I haven't eaten ramen in about 5 years so this was a difficult challenge

stop waiting last minute to get your dishes in. Think about placement and food styling before you even cook the dish. You have a terrible camera, but that isn't holding you back. You are holding yourself back, maybe it is a lack of confidence problem-idk. I do know that you have talent in respect to cooking, but when you compete if falls short. Your dish was alright. It was better than mediocre, but you can do better. The vertical was good, especially when you go into the process (ie: explaining why you slashed the fat on the pork). The dish was lacking in creativity. The pork marinade sounds delicious but the chop could be more caramelized. Unfortunately, the rest of the dish was uninspired. You would not have gotten a better score for posting instant ramen and lunchmeat. You would have gotten a better score from me if your presentation plate looked more appetizing and the meal was more interesting. I wish you well in the coming challenges as I think you will make it to the next round and beyond.

There's too much soulsearching going on here for an instant noodle round. The scores are low across the board here, as many people predicted. It is as if even the competitors took no pleasure in making and rating any of these dishes.

Remember that the task was to create ways to present ramen, with a vertical, to be stored on the boruu site. Endless pages of watery noodle broth wasn't necessarily what was being requested here.

Thank you, that was surprisingly constructive. I do admit this dish was very last minute, work tends to cut into the amount of time I get to think about cooking anything.
I'm not terribly creative with Asian cuisine, even though I am Asian...maybe it's because what's old and boring since i have it every day be something new and interesting for a non-Asia. Or maybe because Asian cuisine is kind of "every day" food food for me. It's kind of hard to get excited about something you have for lunch every other day.

I entirely agree with this.

If people are going to complain about the problem with ramen on /ck/, they should at least be able to demonstrate their superiority by making decent ramen, or turning ramen noodles into something appealing.

I really thought this was going to be one of the best rounds, but it seems like most people just opted out.

In any case, people can at least vote. If you enter a competition you can't simply disagree with the challenge of a particular round. The idea is to take on the challenge and demonstrate what you can do with it...

I am honestly confused on how the scores from the first 3 rounds are going to be calculated.

If frgsp, for example, were to have gotten an average score of 1 or 2 for this round (I personally didn't think the entry should have gotten more than a 5, simply because (s)he did make a vertical showing how to make ramen), would that be better than not having had submitted an entry at all this round?

It seems like a handful of contestants simply opted out, whereas frgsp put in the effort to explicitly show his/her (imho) unjustified dismissal of ramen.

tl;dr - is getting a low score in the third (or any) round better or worse than skipping it (or any round) entirely?

You were one of my favourite challengers in the last competition. I was the one who gave you 5/20. I rated everybody this round particularly harshly because of the concentration on originality and vertical. If you had made a good vertical, I would have given you 3/5 to 5/5 which would put you near the average of my votes. You're right. The averages are weighted for participation because any kind of effort > no effort at all. I personally found your vertical funny, my friend and I were laughing about it when you posted it. And dogsfordinner and I decided to keep your entry since you did technically fulfill this round's requirements (cook ramen, make vertical).

I found it really interesting to read all of the comments from this round. It gave me some different perspectives and (most of) the comments were helpful in many ways. There was actually a quite a bit of drama regarding this challenge theme behind the scenes and I hesitated until the last minute on whether or not to go ahead with it. I wish I had done things differently--either scrap the ramen idea altogether or had specified the theme a bit more--,but what's done is done and I'm glad I've learned from the experience.

I honestly don't understand what all this talk of drama is about. If I'm counting correctly, we had 26 contestants in this round. Of that, a little over half can make it to the next round. It's only natural that some people who got less then 10 points each in rounds 1 and 2, came to the conclusion that they were probably not going to proceed to round 4 anyway. Other people just don't have the time/money to commit to a three month competition.

I don't know what all the hubbub is about. I've enjoyed doing all the challenges so far, including this one. It's supposed to be fun! It's for some good OC, and for us to test ourselves, which is a good thing! And, there were some good looking dishes in this challenge. Yeah, I was like "ramen!?! crap!" when it was first posted, but once I decided what I was going to do, I had a lot of fun with it. You know, challenges aren't just about making elaborate dishes, it's also about working with things you may not like, or trying new ingredients or techniques you haven't necessarily done before, and generally improving your techniques and proving you can do it.
