Use the robuchon method. Essentially, stick fries in pan, over with cold oil. Then, crank the heat. The slow rise in heat will serve as a "oil-poach" basically, then when you reach high heat, you'll be frying them for crisp.

No. The oil is ready when things bubble in it. If it's there, you don't need more heat. If it's not there, you do.

You don't need a thermometer. Just test the oil with a drop of batter and remember not to put too many fries into the pot at once. Deep frying is pretty easy.

I finally got a thermometer and was quite surprised at how little heat it takes to get a proper temp. Regular size dutch oven on smallest electric burner with heat setting = low... Kept the temperature a steady 350F.

I would start with lowest setting and then test it one french fry at a time. Wait a minute or two after adjusting the heat. Its tedious but you only have to do it once. I've found that the settings on the knob are consistent each time so I don't even bother with the thermometer.

It takes surprisingly little heat to maintain the temp of a pot full of oil. However the moment you dump your food into the oil the temperature drops significantly. It's the same thing as putting ice into a warm drink--in this case it's even more significant because the temperature difference between the food and the oil is much greater than that of water and ice. Ice (32F) into room-temperature water (75F) has about a 33 degree difference in temperature. On the other hand, room temperature food (75F) going into 350F oil has a whopping 275F difference in temperature. That means the oil loses a lot of heat as it goes into the food.

Ideally you should be using your thermometer so you can heat the oil back up to the proper temp ASAP once you add the food to the oil. Keeping the oil at the proper temp is key to nice crispy frying and also to keep it from getting soggy or soaked in oil. Done properly, deep frying adds very little oil to the food. However if the temp drops too low then it will get soggy with oil. You can prevent this by using the largest possible pot and adding the food in small amounts, thereby minimizing the temp. drop, and also by increasing the heat right as you add the food to the pot. A deep fryer with a thermostat will do this automatically but when you do it manually on the stove you need to account for that using your thermometer.
