Because you don't lift the pan 12", slip the spatula under an edge, and give the skillet a slight jolt and use the edge of the skillet to flip them?

Or maybe the skillet was not greased enough?

Heat too high?

Don't cook them long enough on each side?

i threw away two of them out of shame and salvaged parts of the other two. smothered them in maple syrup to hide my shame

what is a good batter recipe? every one i've used has turned out like this

Sorry, I laughed harder at this than I should have. The mental imagery of someone crying into their hacked up sadcakes. I've done it before too.

The recipe I use is:

Ingredients
• 1 1/2 cups all-purpose flour
• 3 1/2 teaspoons baking powder
• 1 teaspoon salt
• 1 tablespoon white sugar
• 1 1/4 cups milk
• 1 egg
• 3 tablespoons butter, melted

Directions
1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

If there's a "trick" to it, its to not fucking TOUCH them or poke at the sides at all. Only one flip. It's a lower medium heat. Wait until the bubbles, the edges become tacky and dry, the top becomes tacky, that's when you know it's ready to flip. Patience.
