That's the point of this dish; you break the yolk and it mingles with the hollandaise (which already has egg in it!) and you just drench everything underneath in creamy eggy goodness.

I'd love that except I don't eat seafood. I guess you could put any meat pretty much in a Benedict type dish. Except maybe steak. I'm not sure steak would work.

Honestly I do prefer Florentine, but that's because eggs are kinda heavy to start and Benedict is just Super Too Powerful.

Some people like their breakfast like that though.

I work in a breakfast restaurant type place, eggs benny are our specialty. personal favourite is the beckett's benny. named for someone i don't know. diced chicken, salsa, cheddar, red onion, roasted garlic puree all cooked together, sliced avocado and chipotle hollondaise. sp spicy and delicious

Florentine, I'm a sucker for spinach. Though last year when I was in Amsterdam I had Eggs Benedict with smoky chinese tea and it was perfect drink with ham.

Eggs Benedict is probably my favourite breakfast meal, but as others have said, making a hollandaise sauce can be a pain.
So i just substitute the sauce for a very small amount of dijon mustard, spread on the muffins, as it replicates the tangy hollandaise adequately enough.
