I'm a Eurofag and I've been to the US twice and never have I seen someone there like that.
Now I've seen some shit all around the world, Asia, Arabia and big portions of Europe but I think the little tendencies of regular Americans towards the clapping-for-'Murricka mentality and shitty food are there.

plenty of food needs to be prepared in certain ways to make it enjoyable, that doesn't mean the food itself is bad. it just means it needs to be prepared properly.

i've tried and not liked brussel sprouts when they've been prepared poorly, and i've tried them prepared well and enjoyed them.

eggplant needs to be prepared properly for me to enjoy it, so do mushrooms that doesn't mean they're bad foods. it just means i only like them both certain ways.

Rather than having her try something green right off the bat, how about other white, starchy roots and different kinds of cheese like mandioca/yucca/casava, taro-root/white yam, jerusalem artichokes and jicama, then easing her into red yams, sweet potatoes and oca with cheese then adding other things little by little and so on.
They can't expect someone who has spent 30 years eating only cheese and potatoes to immediately leap into unknown territory.
The first thing I thought of was yucca cuz it can be used to make a cheesy bread and its delicious.
