Uncooked real tuna will always be a slight or very pinkish red shade. Always.

Escolar is a safe food to eat in small quantities, and most people who know this fish know that it can give you the shits.
Real tuna is just never white. There's no such thing as a white filet of tuna. If I ordered some tuna nigiri and the pieces came out as white I would send it back.

People would be completely ripping themselves off (escolar is a cheap fish compared to tuna), and to top it off they're eating a fish that is going to make them shit mountains. It's just best to know what different kinds of raw fish look like before you step into sushi joints.
