Hey /ck/ I'm jewish and I am making a standing rib roast. If it is kosher beef, should I still age it? In the Kashering process the blood is drained out, but would it still benefit from being aged?

Well, it doesn't matter about the blood, because the beef is being cooked organically (bacteria) Now, if the cow was slaughtered by (what i assume we both share) a halal method then it might effect the aging. the moisture is taken out of the meat while it is being "cooked" by the bacteria, the entire process from what i can tell is just allowing the beef/meat to age, and then cutting off what isn't needed and cooking it up. (its basicly condensing the meat)

Now the only benefit you get from aging the beef is that ultra beef taste, seeing as how most of it is tossed out.

So what you should ask yourself is this (will you be eating blood with it?)

If not then it should still work, it isn't the blood that plays that big of a deal, its the moisture coming out of the meat. (there is a thing called wet aging) as long as the meat is being "cooked organically" by the bacteria then it still should come out the same.

Then again, I'm not a butcher. But I'm pretty sure thats how it works. I never thought about the blood really, if anything the lack of blood after slaughtering the animal (as G-D intended it) would speed up the aging process.

The red stuff that seeps out red isn't blood, it's myoglobin. Blood is drained of all meat, kosher or no, the only difference with kosher is the method of butchering (bleeding the cow to death and salting the meat) and that it has rabbinical supervision/approval.

Also, most kosher meat is naturally wet aged in the transport process just the same as any other meat by the time it arrives to the consumer. Aging meat only benefits core muscle meats like steaks, trying to age ribs will not end well because of the chance of bacterial penetration in the rib bone.

Just marinate and heavily sauce it the same as any other ribs.

You shouldn't do it at home because, depending on what else you've got in the fridge, you're going to end up with a piece of meat that may have picked up some other smells and flavors. Opening and closing the refrigerator door is going to mean that the temperature isn't controlled, so you're much more likely to develop mold growth on the surface.
