Whats the deal with natural flavors listed on ingredients? If they are natural, why don't they just say what the flavor is?

Sure, but dangerous chemicals are already illegal to put in food. If they are willing to break the law and put dangerous chemicals in your food and then call them "natural flavors", what's to stop them from lying about it in other ways?

They could say on the label "natural apple flavor" and then put poison in there instead. Once you think someone might be doing that then all bets are off.

The only difference between natural and artificial flavors is their source. You can have two absolutely identical compounds, but one was made in a lab and the other was extracted from some beetle. The one made in a lab is considered artificial, and the other is natural.

Food Scientist here heres a breakdown on flavors

Flavors are made by combining various aroma chemicals. These aroma chemicals can be from a natural source or can be synthetic. Natural sources do not have to be from the flavor that its imitating, for example you can have a "Natural Orange Flavor" using aroma chemicals sourced from other plants. Because these chemicals are very strong and would be difficult to weigh during manufacturing, they are diluted with solvents such as water, ethyl alcohol, propylene glycol, glycerin etc. These solvents do not have to be natural for the flavor to be natural.

About safety - in fact, many of these aroma chemicals are known to be toxic for humans. A main component in cherry and almond flavor (also exists naturally in various plants) is benzaldehyde which is a neurtoxin. But like I mentioned, aroma chemicals are very strong that the concentrations used make it harmless. Also know that just about anything can be poison in the right concentrations.

Trade secrets are no joke. Flavor chemists who make flavors put in a lot time to create flavors, many involving dozens of aroma chemicals in very exact ratios to get the right profile. Hell, flavors are super easy to make so if they disclosed the ingredients flavor companies would go out of business
