i caught his show on today, good eats. i thought they stopped airing it or something, but i was happy to see it. he analyzed peaches and went over their history. it was pretty interesting.

he also blanched the peaches, and rubbed the skin right off with a paper towel. that's a pretty cool tip, gonna try it when they're in season.

from what i gather, the guy dissects an ingredient and gives you some background and tidbits on it. it's not really the typical cooking show. (bimbo's with bleached white teeth smiling as wide as the fucking can)

he also seems to describe the science of why certain stuff goes into the dish.

He does go overboard on simple things like making a cup of coffee or tea.

I remember when I was about 10 years old and started watching his show. He really helped me understand cooking. AB provides a good basis for people new to making just about anything. His recipes are just base recipes so you understand what the food item consists of to build off of.

He's not the best chef that I've ever seen, but he's one of the best teachers. Sitting down to his show you learn the history, science and technique behind the cooking/food, which is lacking from a lot of shows today.

I just hate when people parrot Alton Brown in an attempt to sound more intelligent or knowledgeable, giving me a lecture about protein chains, or amino acids and gluten or whatever the fuck when their cooking is mediocre.

Pretty much this. I also like his cookbooks because they don't just give you recipes, but a basic primer on how to cook food in general. First thing I tried cooking after reading "I'm Just Here for the Food" wasn't in the book at all, just something I was inspired to cook and felt was within my understanding.

He's not an expert chef or anything, and if he opened a restaurant, it wouldn't be high on my 'Go-to' list at all. But for your average cook, he shares information that can be applied in multiple ways, and gives it in a method that's easy to understand. Which is what I like in a cooking show.

Ah, so it's a classic case of hating a subject (or person) because of the fans.

An understandable mistake, many make it, but it IS still a mistake.

On the side of the fans though, I can completely understand why they want to throw in a quip about how certain things (especially things they're obviously invested in) work.
Knowledge is fun to share, and as a social animal, people are always trying to share something with their friends.
If they go overboard, then yes, it's obnoxious, and someone who literally stands there and lectures you on cluten or pectins or any of that stuff.. well, you dont really need to be friends with them anyways.

But I suspect 'lecture' in your post was hyperbole, and you really just fall on the 'traditional' side of cooking. The side that insists on solely using wooden utensils for risottos and other nonsense like that.
