Cooking only for two this Christmas, probably going to just roast a chicken. What would be some good, festive sides to go with it? I'm open to other suggestions for the main course, too.

roasted cauliflower. cut it into bite sized chunks and make sure it gets really brown and caramelized. shit's delicious.

brussels sprouts fried in butter with pancetta/streaky bacon

maybe add some pine nuts if you fancy

potatoes roast in duck/goose fat, dusted in semolina for a great crunch

Get brussel sprouts and cut in half. Set aside. Crisp pancetta in a pan, drain and set aside. Put brussel sprout halves back into hot pan, caramelize them, add chicken stock until it the brussel sprouts are halfway covered. Then add golden raisins and simmer on medium heat covered until tender. during the simmer more chicken stock may need to be added to keep the brussel sprouts moist. most or nearly all the chicken stock should be gone by end. re-add pancetta and cook for another minute or two. serve.

Here:

2 cups yellow cornmeal
1.5 cups flour
3 eggs
2 cups milk
2 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1 Tbsp. lard, shortening, bacon fat, etc.

Place skillet and fat in a cold oven to preheat to 425 F. Combine wet and dry ingredients separately. Mix together loosely and pour into preheated skillet. Cook for 20-25 minutes or until a toothpick comes out clean.

Zucchini and Spinach Gratin
2 pounds zucchini, grated
1 teaspoon salt
1 pound frozen spinach, thawed
1 tablespoon olive oil
1 yellow onion, chopped
1/2 cup chopped parsley
2 garlic cloves, minced
1/2 cup shredded cheddar/monterey jack
black pepper, to taste
3 eggs
grateded parmesan
olive oil
Toss the zucchini with salt in a colander. Let sit 30 minutes and squeeze out moisture. Place in bowl. Add spinach to colander and rinse. Squeeze out moisture and add to bowl.
Preheat oven to 350F. Grease a square baking dish.
Fry onions in olive oil until soft. Add garlic and turn off heat.
Add parsley, cheese, black pepper and eggs to bowl. Then add onion mixture. Stir well to combine and pour into baking dish. Pack down and sprinkle with parmesan and drizzle with olive oil.
Bake for 45 minutes until golden brown.

Mushroom Stuffing
3 cups croutons or dried cubed bread
3/4 cup butter
1 yellow onion, chopped
8 ounces sliced white mushrooms
1/2 teaspoon chopped parsley
1/2 teaspoon sage
1/8 teaspoon rosemary
1/8 teaspoon marjoram
1/8 teaspoon salt
1/8 teaspoon black pepper
1 cup chicken broth
Let bread slices air dry for 1 to 2 hours, then cut into cubes.
Preheat oven to 400F. Grease a baking dish.
In a dutch oven, melt butter over medium heat. Cook onion and mushrooms until soft. Season with parsley, sage, rosemary, marjoram, salt, and pepper. Stir in bread cubes until evenly coated. Moisten with chicken broth; mix well.
Transfer into baking dish and bake 25-30 minutes until the top is crispy.

can sub celery for the mushrooms if you like

Theres not a lot of us this Christmas, so I'm not doing a huge meal either. I've posted my menu in other threads before, but I'll do it again anyway:
Fresh cream of mushroom soup
Petite fillets and butter poached lobster
Roasted brussels sprouts
Salad of mixed greens, candied wanuts, blackberries and feta in an orange-champagne vinaigrette
Dessert: cheese tray of a triple cream, syrah soaked toscano, white stilton with lemon peel, apples, pears and grapes, water crakers and pita crackers
Sweet: saltine toffee
