I picked this up at my local ornamental market thinking it was dark soy sauce. It's more of a sweet, kinda sorta salty, odd sort of flavor. Any idea what i can do with it? Don't want to waste it

It still looks like it's functionally a dark soy sauce. A small dollop at the end of stir fry, mostly for color and to finish the flavoring.

I'd love to get a detailed description of the various soy sauces and how to use them.

Oh, and never, ever buy Lee Kum Kee soy sauces. They use hydrochloric acid to speed the fermentation process.

I'm not sure, but I doubt it. Shouldn't affect flavor. From the report I read Korean and Japanese companies were ok. That said, Kikkoman did have local production in China while I was there. I would trust Kikkoman more than any Chinese brand.

Sure, but that doesn't mean it's healthy. Developing cancer from 3-MCPD isn't very likely by itself, but I'd prefer to avoid the risk. And the fact that they did in the first place means I'd rather not put their products in my body. Same with the Chinese dairy industry in my mind.

Its fucking oriental, not ornamental. The former is for Asiatic products, the latter is to classify something that can be used as an ornament or a decoration.
