I'm quite sad about it too. Zombie and I were talking before the new thread went up about how weirdly attached to the competitors we've gotten. Part of the reason we decided to make the last round open to a final four instead of a final two is because it's hard for us to keep announcing eliminations to contestants who have often gone above and beyond. : |

It was especially tough this week since, like you said, last week was arguably Smith's best dish to date (and he's been the only contestant who had been scoring higher and higher with each successive round). He's also hung out with a few times over at phoostream and he's a nice guy to boot, so yeah. :/

Nettle, like I wrote above, was always one of my favorites. Unfortunately, it was the participation score that did it.

Pork stew with Creamy Corn Grits

I created this dish one weekend when I was sick and cold. For me, it is the very definition of “comfort food”. It is inexpensive and uncomplicated. It is warm, a little spicy, and very filling. Slow cooking is an easy way to make food incredible. The pork falls apart gently, and the vegetables melt in your mouth.
The grits are like velvet. They are good on their own but paired with the stew they are amazing. I really like how the corn caramelizes in them. You cannot cut corners by using quick or instant grits. You must use old fashioned grits to get the right texture. You want them to be very thick to hold up to the stew. I love this dish warmed over the next day even better than the day I make it. Anyway, I hope you like this as it is truly one of our house favorites. Enjoy!

You're right but the voting has been too high (in my opinion) from the beginning of the contest. But giving there's no control with the rating I consider it more of a gimmick.

By the standards of the previous rounds you gave a pretty low rating. But seriously - that's how it should be. I don't think I've ever seen a serious rating below 12 which is a shame.

I feel, like several others, that you could have done better with the plating. The starter has a much better appearance than the entree. I feel this is an overall good dish, but not great, as my scores reflect. I feel there can be some debate over whether this really is "comfort" food, but I also believe mushrooms are very autumn, so I didn't dock you too much there.

Suggestions for rules modifications (for next year's challenge) :

Allow a +1 bonus and -1 malus for reasons other than presentation/originality/appeal/challenge goals, like "I hate tarragon", "oh, cool, a SNES cartridge of a game I love in the background", or table presentation... (People already did it more or less unconsciously or explicitly.)

It's nice that you found a system to let people skip some weeks, but maybe try to avoid the summer holidays. I wasn't able to follow very well, being lost in the middle of nowhere with no 3G, so I don't know if I'm the only one who couldn't post for 4 weeks in a row, but I guess I'm not.
It would be nice to include other holidays, but it'll be trickier. Maybe a "I'll go skiing for 2 weeks next month, can I get 2 challenges in advance by email and mail you my pictures so you can post them for me ?" system... (Would also work for other "good" reasons for not being able to cook/picture/post.)

Well, I have been watching these threads for a while, love them. Can't wait for the second annual. I grew up eating Ramen, (not weeaboo) I used to call all Ramen, Ichiban. So its a comfort food for me. I know its not pulled pork or mac and cheese, but its one of my comfort foods.

What you are looking at:

Ramen made with an chipotle applewood soup base. Topped with fine red onions and fried green tomatoes, a touch of truffle oil. Sided with some sambal.

I made two changes to the recipe:

- I didn't have time to get agar agar so I used corn starch instead. I have to play with agar agar some other time though.
- Because I overslept I had to cut the brining at the two hour mark or so which wasn't enough (I needed pictures in daylight).

The filling itself was absolutely divine but pies are overrated. I put a little too much mustard in and I don't really think the ham is necessary.

Sorry about the late posting, 4chan continually said I was mistyping captcha on my smartphone for the past two days.

Stir-fried foods are my comfort food. So I made a stir-fried ginger-lemon pork.

Ingredients: Pork, corn, carrot, celery, bell pepper, onion, garlic, ginger, soy sauce, lemon, black pepper, salt.

Cut all ingredients into pieces roughly the size of the corn kernels. Marinate the pork in two tablespoons of grated fresh ginger root, the zest of a whole lemon, the juice of that lemon, plus a couple of tablespoons of soy sauce. Crack black pepper into the marinade.

Heat up a pan, add a couple tablespoons of butter. Allow the butter to brown, then add the onion and garlic first. Give those 2 minutes on high heat, add the remaining vegetables.

Stir for roughly 3-4 minutes. Move everything to one side, add the pork that has been marinating. Let this go for 3 minutes, then try to flip all of the pork as best as you can, let cook another three minutes, then mix everything and cook another 5 minutes, stirring every half a minute.

Add salt as a finishing touch, you won't need much of it.

Chop up some thin strips of ginger and green onion to garnish a mound of rice, add a little hot sauce.

The point of unpeeled garlic is that you can cook it until it's not pungent any-more. The skin and oil protect the garlic and let you cook it at a relatively high temperature for very long without browning or drying. It becomes soft, both in taste and texture.
And it was served with bread, vegetables and very tender meat, and not meant to be eaten alone. Like a side-sauce, if that makes sense.

It's called "ail en chemise" in French, I would translate it as "garlic cooked in its skin until it's soft and not pungent", not as "unpeeled garlic".
