Round Eight – (Aug 14th-21st)

-You MUST timestamp your entry photo. No timestamp, no vote. You only have to timestamp your completed dish photo, not multiple photos if you’re posting a set.
-The more photos you post, the better! We want to see your cooking. Detailing the cooking process/posting a recipe is encouraged (but not mandatory).
-If you are not one of the 13 contestants remaining, or have been eliminated already, don’t look at that as a reason to stop posting. You can still do challenges and post your meals, just be sure to remember to say that your submission is “Not for vote” or “For consideration only.”
-Elimination Rounds carry penalties and/or bonuses. Bonuses will apply to the top contestant or contestants for that round, and will usually involve some kind of perk or benefit for the next challenge. Penalties are for the bottom five contestants of any E-Round, and are meant to make the following challenge more difficult.

Voting will be carried out in this thread. Please read the voting guidelines below.

-Presentation: The appearance of items on the plate; plating skills
-Originality: Creativity in composing the dish
-Appeal: How appetizing the food looks/whether or not the dish appeals to your personal taste as a voter
-Challenge Goals: How closely the entry followed the challenge goal(s)

Hey guys, excuse any potential typos I'm posting from my phone atm. As I said in the previous thread I'm a little hesitant on posting current scores for each contestant since it could be discouraging for the bottom competitors BUT I am willing to post them as long as there is enough interest. So far the impression I got was that only a few people wanted to see them but if I can get a quick yay/nay frm more than a 2-3 people I can have them up sometime in the evning tomorrow. :)

A simple yet complex shrimp + fruit juice sauce

Steam shrimp.

Peel one orange, two limes, two necatrines, blend, strain, boil the jiuces down with some sugar and salt/black pepper, add some water/corn starch to thicken.

Off the top of my head, and it's fucking great.

I've had several, and the stuff on that plate looks exactly like the raw cardboard variety.

Put a plate like that down on the table and see how many people reach for the raw kale as a "palette cleanser." They'll leave that mess of wasted greens on the plate every time.

Pickled Shrimp is my favorite party food. I love the delicate flavor of the rosy shrimp, the crisp bite of the onion, and the delightful brightness the preserved lemon imparts. I never come home with leftovers when I bring this dish to parties, and I get frequent requests by friend to make it. This summertime treat is perfect to accompany drinks on the porch while you watch the lightening bugs wake up in the early evening.

Ingredients:
4 eggs.
2 Shallots.
1 apple.
2 tablespoons of neutral oil.
2 tablespoons of apple vinegar.
2 tablespoons of chopped capers.
About 10 leaves of ramson.
300g. of asparagus.
Some bread.

Boil the eggs for about 7-8 minutes, then peal and chop them, the capers, apple and shallots. put in all in a bowl and add the oil and apple vinegar. cut the ramson leaves "chiffonade" style and put them in the dressing aswell - taste with salt and pepper.

Lastly you just blanch the asparagus, mix it with the dressing above and then serve it with some bread. There should be enough appetizers for 5-6 people.

The bread is standard wheat bread - there's no point in explaining how to bake it, but you could use pretty much any non-rye flour bread.

Apart from that it looks rather nice.

NO TIME FOR VERTICAL. Here! It's a pan-fried cumin and paprika coated tuna served over a bed cold udon noodles.

- Marinate Tuna in a mixture of cumin, paprika, salt, pepper and a dash of mirin, just enough to make the mixture stick onto your tuna.
- Pan-fry the tuna and once it's done, set aside to let it rest.
- Slice the tuna against the grain, coat lightly with a sauce made from lemon juice, wasabi and soy sauce.

- Boil noodles, once done. Rinse under a cold tap until they're cold.

- Prepare a sauce with soy sauce, mirin and sugar (or buy the pre-mixed version of cold-yakisoba sauce) Mix with noodles.

- Steam re-hydrated shitake mushrooms until they're soft.

- Assemble dish, garnish with lemon zest, chives and mushrooms.
