parmesan reggiano, sole gran queso, or extremely aged vintage gouda. i could literally sit and eat an entire block of any of those. i like any hard crumbly cheese thats been aged long enough to have calcium lactate crystals.

For sandwiches I like pepper jack, salads feta or crumbled goat, on crackers with prosciutto I love a really buttery brie.

If I get a cheese plate, I usually ask for a really sharp blue, really creamy brie and a gouda or cheddar.
