Apart from being alive in the 80s and 90s and remembering how people used to make it, Vincenzo's Plate in just about every carbonara mentions it
The 90s were when the creamy style started taking over
There was even a style of carbonara where you boiled the spaghetti and put it in a buttered pie pan, sprinkled sauteed ham/bacon/guanciale over the top, tempered the eggs, mixed in the cheese and pepper, pour that over the whole thing, and baked it like a casserole
Then you'd slice it like a pie, served hot or cold
God the days when I'd open up my lunchbox and see a slice of that shit, I hated it
Hindsight, my dad loved me and made sure I ate well, took many years for me to understand that

I disagree. Using bacon makes a different dish which purists might refuse to call carbonara, but it's delicious and worthy of being eaten. This is especially true if you can get your hands on some good local (or relatively local) bacon; cooking with local ingredients is always cool.

So by just insisting that THE Carbonara(TM) has to be made exactly like THAT with X Y and Z you can have ENDLESS discussions and arguments.
