Basically nobody makes their own fries anymore. You can get par cooked fries in a bag basically the same price as wholesale potatoes and it saves your prep cooks hours upon hours of doing it themselves. Come service time all you need to do is dunk em in the fryer for a couple minutes. The only quality difference comes from the variety of potato (which US foods, Grasmick, Sysco and Co will not disclose or they'll just lie and say it's russet), the cooking time and medium (the good places I worked at used beef tallow) and whatever they do after the fact. This was the case for every restaurant I worked at before I left the industry. I've worked as a sous/KM in 5 different places in my city, including the top rated restaurant and none of them deviated from the bagged fries. It simply takes too much time when you're doing 300 covers a night. Maybe it's just where I happen to live, maybe it's the difference between a place that isn't looking to impress and one that is. Either way I'm happy for you anon, a perfect french fry is one of life's simplest pleasures and you seem to have found it.

I mean yeah, this is it, plus, other items have increased in price. Beef and produce is way up. Consumers tolerate cheap items increasing in price more than they tolerate already expensive. If the $1 fries go to $1.75 for the same amount, that's way easier for a customer to deal with than a $6.50 burger going to $7.25. The fast food restaurant would rather only raise the burger price by 25 cents, and then double the cost of fries, rather than raise the cost of the burger, even IF it's the ingredients for the burger that have gone up more than the fries.

Same reason why with the recent grocery inflation it's potato chips and soda and some of the cheapest to produce mass produced food that has gone up the most while ground beef and chicken prices really actually haven't changed a whole lot
