I am a giant sinner. When I get pho I usually get it to go and they give me a big bucket of broth, a bag of veggies, chilies, sauce packets and a separate container with onions, raw beef and the rice noodles. I will usually add the veggies to the broth, throw in the onions and give the blood soaked rice noodles to my dog. I then grab a pack of cheap ass ramen noodles and throw the seasoning packet and the noodles into the broth. Best of both worlds, cause I love pho broth, I hate the rice noodles.

I recognize that ramen is better but I prefer pho.

I've had great pho and bad pho. It all depends on how its prepared and if you understand how to add what you like to it to make it how you like it. It's not a food you can just eat and enjoy. Theres the basil to consider the bean sprouts, The Jalapeno slices. The additional sauces to give it more heat. Regarding pho in general, I've yet to have anything other than home made that tasted like authentic pho, the ingredients (mostly the veg) isn't widely available in the USA. Also, there's a stark differenct from Northern and Southern pho, the latter being fattier and heartier. Some slight ingredient differences too just due to climates.

You're missing out anon. I've only had snake in VN, and didn't care for it, but I think it's because of how it's made. They take a python and wait until it's pregnate, and the eggs are mature enough to eat, and cook the whole thing. Very chalky and chewy.
Deer is great meat as well, but I also recommend trying elk if you can find it or travel to hunt. I prever vinison jerky to beef. Where you at in the South? I know anons that trap squirells and stuff, basically free food, and they're very lean as well, like eating a large frog.
I don't recommend dog, it is very gamey, worse than wild boar, but some people like it. I'm a huge fan of Tiết canh though, as off putting as it can come off to some, it's a great snacking dish, basically asian nachos.
