It depends on what part of the world you're in. The US and Canada require shit and other hen fluids be washed off of eggs before they can be sold commercially. This removes a protective layer the egg has that keeps pathogens out. In other parts of the world, selling eggs with shit on them is normal so there's no need to clean the eggs. As a result, the protective layer is kept intact and the eggs can be stored for a while without refrigeration. People in those places (hopefully) wash their eggs right before cracking them.
If you're in the US and Canada, you can buy eggs directly from a farmer, complete with shit and other fluids on the egg, including the protective layer. Or you can raise your own chickens.
