What are some cooking methods to make them more interesting?
To me, squid has always been the body for the deep-fry coating to deliver the dipping sauce
Squid, when prepped and cooked by perfection, is only mildly sweet (taste) and springy. It has no distinct flavour.
Picrel, Stuffed Squid in tomato sauce. I ate this only for the meat fillings inside.
Another way to eat them is to sun-dry them and then grill them using high quality alcohol (khô mực nướng). Flavour wise, this btfo every other squid dish to me, you can just eat them as is, no salt, no dipping sauce required (though most dip them in chilli sauce)
Ideas?

Finely chop up some of the remaining squid and use it in the stuffing. It somehow gives it a "fuller" flavor, so that the stuffing and the squid body aren't like to separate things.
