they're delicious, like a mix of pear, apples, vanilla and cinnamon. have to poach or bake them though, raw they're woody and bitter. would recommend, has become my go to breakfast spread. will have to try your poaching liquid, sounds awesome

I’ll have to try one if I can find it.
I got into poaching them in red wine when I went to burgundy and had one cold with a bit of black currant flavored sorbet. I like my pears warm so I just add the crème de cassis for that currant flavor. Generally when they make it in burgundy they also cut peel them so they have this rough hexagonal shape, but I don’t mind having some skin on there, even if the coloration is less even. Up to preference. Usually people also add a cinnamon stick or some honey but I prefer to dust with cinnamon powder when it’s done.

Cut pears in any desired shape. Take out the cores. Poach them in whatever liquid is desired until they're soft firm enough to remain intact. Enjoy!

To add to this:
If you make it with red wine and sugar, you can save the leftover liquid as a syrup to either drizzle over the pears if you chill them or simply to use on ice cream or other desserts.
