Intense non citric acidity, notes of apple, tamarind and lime, complex aromatic profile.

I left this one for last because now that autumn kicked in I want to make longer aeropress hot coffees and this medium-light roast seems the right coffee for this. Will brew it with my moka for the moment, in an hour circa.

Not the last bag (I still have 2 blends that I already tried) but it's the last of their single origins.
I Just tried it starting with a fine grind because I expected a lot of acidity and I was hit with a sweet and fruity bouquet of aromas, it reminded me of Peruvian coffee, the acidity wasn't lemony-ish just as they advertised on the package but actually I didn't feel it a lot, overall it was a very pleasant cup without a distinct predominant aroma but a nuance that went from gentle citrus fruits, that sweet acidity of green apple and then closed to earth and malt, the aftertaste was still malt but very clean and non long lasting.

I appreciated all Hodeidah coffee and so far the best was this one and the Super Selezione blend (which should be 30% robusta even though they don't disclose this).

Probably in less than 1 month I'll order my next coffee and I think that I'll go back to Caffelab because I have a 15% coupon and because they let you choose if you want filter roast and I need it for the aeropress.

Nope, I bought another butter from Südtirol, centrifuged cream butter with 83% fats and I'll use it.

I also dropped the vanilla bean for vanilla extract and corrected the workflow for the lamination process.

Cheeky little 2am affogato using cold brew à la Chef John. 1:9 ratio. Equal parts by weight coffee and ice cream. Not really that great if I'm being honest. There is no temperature contrast between hot coffee and cold icecream. It's just all cold, and the watery coffee freezes on the surface of the icecream. The coffee flavour is more muted compared to the Moka affogatos I've had and the sweetness of the icecream obscures the flavour of the coffee. It's very similar to those coffee milk shakes / slushies available at chain coffee shops. Probably won't make it again. It's surprising how much different it is than a fresh Moka affogato. Also strange since I don't dislike cold brew, but this definitely leaves much to be desired.

Got a Hario Switch and a very thick Acme diner mug today. I feel happy.
So far I've only used the Hario Switch as a full immersion brewer (dumping coffee in the water and stirring, waiting, then draining) instead of trying a hybrid method where I'd do a bloom phase and all that.

Personally I can't stand the smell of old, oxidized, wet coffee grounds. Just nasty. Cold brew is tolerable for a couple days. Make sure the recipient doesn't mind the scent of old coffee. If they don't mind oxidized coffee they'll probably enjoy such a gift basket.

I haven't tried that, I've kinda done the opposite with lighter, fruitier coffees and treated it like a pourover for maybe 2/5ths the brew volume, then closed it off and let the last 3/5ths steep before popping the valve again. I'll have to try the other way too.

With my Espro I've noticed that a lot of liquid can get trapped underneath the solid base of the filter since its solid and nonpermeable, and water won't force itself around too much. However if I stir the coffee before pressing so the coffee is less sticking together, more distributed, and not just sunk to the bottom I can get more coffee from the press since it goes up the sides easier. Anyone else experience this?

Is there any pourover wizards here? I thought I was good at pourovers, but I'm at a total loss right now. I switched from a TK V60 (02 size) to a V60 (03 size) and now my coffee is suddenly coming out bitter. The filter is functionally unchanged since I am using the unbleached Hario filters.

Here's my old recipe:

300g pour

I've adapted it to the new pourover but it's... not really working, here's what I'm doing now:

I've been playing with the variables and it seems like nothing is working, I'm at a loss.

OK, I just had to know so I went back and tried one more time. I realized that perhaps the clays in the ceramic V60 have different thermal properties than the pure glass one. It seemed to me that I could feel the ceramic one pull more heat from my hands just from holding it, so it should also have a natural cooling effect on the water.

This time, I didn't bring the water to 212, instead I brought it to 200. Also, I didn't use the keep warm function on my kettle while brewing. To make things just a little faster I adjusted the pours slightly and did 150, 150, 300, 300. It's still a little bitter, but this actually moved things in the right direction, now it's decent. I'm guessing it needs to be even cooler, about 185. I thought my coffee was light enough in roast for very hot water to be appropriate, but it seems that my ceramic V60 just had a rapid cooling effect, while the glass really traps in the heat. I should have known that the bitterness was due to water heat and not due to under extraction. Thank you for reading my blog.

I use pic related as a glass (which coincidentally I have as drinking glasses in my kitchen because why not?), fill it with ice cream for 3/4 and then I put it under the espresso machine pouring coffee directly on it. Had a very nice french press brew today. Accompanied by a Costco baguette.

1:15
30g coffee and 450g water
150g water for a bloom of 2 minutes. Stirring vigorously with a wooden fork.
300g water after the bloom. Stirring continuously for 4 minutes then stirring every 2 minutes until timer reached 10 minutes.
Lid on and press mesh filter just under the surface at 12 minutes.
Slowly poured into cup at 15 minutes.

Came out smooth with no overpowering acidity or bitterness. First time brewing these light medium roasted Columbian beans I got from an open bin grocer. I am impressed. I thought they'd be worse.

This super concentrated coffee only applies to non-Americans. I figured out how to use my size 03 V60 last night from scratch last night and I'm able to recreate the perfect cuppa. I was inspired by Tetsu's "Devil's" recipe.

Based on how I was brewing before and how you typically get good coffee in America, I decided that the secret to good American coffee is to brew for a long time and take advantage of late stage extraction, since drip pots and also my TK V60 always took at least 5 minutes. I don't have a Hario Switch (yet), but I recreated the aspects of his recipe in a regular v60 by pouring like this (grams listed is total weight on scale):

Thoroughly wet filter with cold water
Heat water to 200F
add 30g coffee
@30s: 100g
@60s: 200g
Add cold water to pot to make 176F
@1m00s: 400g
@1m30s: 600g
@2m00s: 800g
@2m30s: 900g
Let it drain all the way through (finishes around the 5 minute mark)

A ceramic V60 will naturally cool the water like this. It's kind of a hassle to have to manually cool the water with the glass dripper, but it's fun, and honestly the coffee came out even better than it used to thanks to this manual manipulation, and slight increase in grind ratio. It's bright, aromatic, and full bodied. I guess I'll stick with it. I like the big dripper so I can make enough coffee for the whole day all at once. Thank you for reading my blog.

turn on heat, untill bubbling. don't be a retard and let it on max heat, but you will want to keep it bubbling until it changes colour.

Great option for home use though I prefer single dose hoppers for home use because i brew different coffees daily. Makes more sense for my workflow to weight beans, pop in grinder, turn grinder on, wait for all beans to be ground then turn grinder off, instead of a timed dose controlled by the grinder. But that's a preference to my workflow because if you drink a bag of coffee at a time then the timed dose and hopper are great.

I wanna try it because before I became a coffee snob I loved plain black Dunkin coffee so much and I wonder if my taste buds are so molested by this point that I would no longer appreciate this coffee but who knows, maybe it would still taste as good as I remembered. I hope it does or else I ruined coffee for myself because even my fanciest V60 brews don't emulate the enjoyment I felt of having a full cup of that flavorful Dunkin coffee that made me feel wide awake and happy... the best way to use the french press is to not press and to instead use it as long immersion brew with a filter

if you press aka use a french press how most people do, you will have a decent chance to have a non insignificant amount of silt in the "filtered" coffee. but letting it sit and letting the silt settle and then slowly pouring through the filter you massively reduce the chance for fines or silt getting through.
