Update on the moka affogato. Added more icecream to compensate for extra water. 100g of moka in this 200ml cup, I didn't measure the weight of the icecream. Came out pretty good, although still watery. The drink itself tastes a bit like sweetened cappuccino. Would recommend if you don't have real espresso.

The Giannina models are a bit bigger (fit greater volume of dry coffee) than the Bialetti models for the same amount of cups. The 6 cup E&B competition filter should fit Bialetti 6 cup models but will not fit any Giannina.

It's the upper filter of the 3 cups Giannina.

The problem doesn't lie in the dimensions of the filter because they're comparable in width, the problem is, as you can see in the image, that the internal round part is too wide if compared to the E&B filter, therefore the coffee puck in the Giannina would exceed the filter limits.

I'm not sure but something tells me that narrower pots such as the Alessi 9090 and the Ilsa Slancio could fit the filter, especially the latter because it has a screw mechanism like aluminium pots

I saw some "espresso" pre-ground coffee at the grocery store (e.g. Bustelo). Can that be used in a moka? I'm thinking about getting one for when we have guests, and it would be slightly more convenient if we had grounds readily available.
Curious to see what would happen if I used my Greek or Turkish grounds in there, too, or maybe some Viet grounds. I'm guessing it wouldn't be great if you're far off the grind size like that, though.

Espresso coffee is just coffee. There aren’t beans that work best and are thus known as espresso beans. That’s a marketing gimmick. Some beans certainly work better than others, subject to personal taste obviously, but preground espresso from the store probably won’t work as well as a good whole bean you like and would drink for non-espresso drinks.

Today I learned that Nespresso machines basically make turbo shots by extracting in 20 seconds or less and the result is a sweet, tasty and clear cup...of overpriced and stale coffee.

I was more thinking of the grind size than the beans themselves, though bean quality is a fair point to consider.
I already make espresso at home, so I have good beans, it's just a hassle to make it for five people with my setup. I guess a more clear version of my question might be, "what level/range of grind fineness is appropriate for the moka, and are there easily-available pre-ground beans besides dedicated moka grounds that will match that?"

I'm investigating why this happened, I'm torn between an excessive leavening (I left it frozen 6 hours to thaw and leaven in temp oven @ room temp) and the butter spilling inside the dough and fucking up the structure, because it leaked when I was laminating the dough.

Apart from that, the taste was good and the external puff pastry was crunchy and as I expected it to be, so considered that this is my first try at croissants (I'm good with normal brioches) I'm happy.

I still have 7 croissants in the freezer and I will try different thawing times and thawing them in the fridge + leavening at room temp 1 hour at least as the other anon suggested me.

Try it. I suspect you will get some channeling. To reduce channeling cut some paper filters to size. Put one on the bottom of the funnel below the coffee grounds, and put one on the filter plate. Adhere the filter paper with some hot water. Make sure it doesn't cover the gasket. WDT to break up clumps. Use the lowest possible heat to increase contact time and puck saturation. Use one gram less coffee than you usually would. All this should give you the best chance at getting a nice extraction out of espresso or turkish ground coffee in a Moka brewer.

That’s what I did and always do when I make brioches too (I use Manitoba flour for these) and with the latter works wonderfully because I get pic related results.

IMHO it’s the lamination that was fucked up because the butter instantly become soft for whatever reason, next time I’ll try to keep it in the freezer some minute to cool it down more and keep more space between the butter and the edges of the dough.
