Mayö is overall the best compliment to fries. It's smooth and mellow with a little v'niggery goodness and all goes so well with crispy oily salty fries. Ketchup is easily 2nd best and if you unagree fight me.

Fun Fax: I learned to love mayo on fries by going to Pommes Frites at St Mark's Place in the East Village, and the place fucking exploded killing two peeps like 5mins after I bought fries there. I was literally in the last 20 customers they ever had.

this was about 5 years ago now, i don't remember all of it. and it's for a largish batch.

20 cloves garlic, dry roasted
1 or 2 tbsp garlic powder
white sugar i can't remember how much, maybe 2 tbsp
salt i can't remember how much, maybe around 2 or 3tbsp
white/black pepper i can't remember how much, pretty sure white pepper as black made it look too dirty, maybe around 1 tbsp
1/4c wholegrain mustard
1/2c apple cider vinegar
half a lemon of juice
6 size 7 eggs. or 500ml soy milk if vegan.

chuck all that shit in a blender and pour in

1.5l canola oil

made some good thiccc aioli.
