I have a lot of chilis and no space to freeze them all.
I tried a few years ago and had to abort after a couple of weeks because of mold.
Recipe's on the internet are all over the place with regard to salt percentage, if it needs to be submerged, how finely chopped (if at all), etc ...

In small to medium quantities, yes. If you don't want to chop it (in which case it's just whole chilies rather than mash), I'd recommend submerging in saltwater brine. Zero your scale to the weight of the container, add ingredients and water, then add 2.5% of that weight in salt.
For actual mash saltwater brine doesn't work so well, because the mash won't stay submerged, a good bit will float to the top. I tend to just ferment mash without anything else. Last mash ferment I did was 2.5 weeks on my counter, nothing added. Slightly more risk than a brine ferment but I never lost one. The fermentation will produce co2 which will lay on top of the ingredients like a blanket (co2 is heavier than air) and protect them. Add a airlock if you want to increase chances of success, but I just use a lid I place on the container without screwing it on. Alternatively use a towel and rubber bands. You just want no flies or anything to get in there.
The first few days I stir my mash because the top is the most dangerous area where mold might outgrow fermentation (it's a race who develops faster - if the fermentation is faster, co2 and the dropping ph will protect the mash and you get a great ferment. If not you get mold.) Once it got going a bit and I felt comfortable that co2 and pH were about right I just left it.

That's what I made from my last mash. Tastes pretty close to tabasco, except slightly spicier (due to scorpion peppers) and I used kombucha vinegar rather than white wine vinegar. You want to mix your mash and vinegar in a blender, then strain through a sieve. That sauce will however separate. If you want it to take longer to separate, use a high powered blender. If you want it to take a long time to separate (similarly to how long it takes for tobasco) use a stir plate and stir for 2-3 days.

The right bottle is the tabasco.

I bought this today because I liked the label. First ever truffle hot sauce. It is suprisingly good. The earthy truffle flavor adds a nice touch to a solid hot sauce. It does not use synthetic truffle oil. A little expensive, but a bottle like this will last me a fair while.

1 1/2 tsp course sea salt
1 tsp Knorr tomato-chicken bouillon
3 tbsp white vinegar
3 cups water

1. Toast the cumin seed and coriander seed until fragrant, ~5 minutes
2. Add all ingredients to a pot with water and bring to boil
3. Turn off burner and cover with lid for 30 minutes
4. Remove solids to bowl to slightly cool, ~10-15 minutes
5. Blend the solids until smooth consistency, then remove to bowl
6. Add ~2 cups of cooking liquid back to loosen salsa, or until desired thickness

For best flavor, refrigerate overnight.

Tapatio was my favorite sauce for years until I tried Valentina, now Valentina has been my main sauce for over a year, its like a better version of Tapatio.
