Here in the states, if you live in a moderate-large city there are usually celebrations here. A lot of breweries will have special brews, maybe some german food vendors around. And if there's a German-American society, they usually put on something fun.

Last year my friend held an oktoberfest party and I showed up there with prepped whole piece pork shanks that I finished off in his oven. I wasn't able to find lard tho so I had to make do with tallow. Everybody at the party loved my Schweinhaxe and it was the highlight of the dinner. This year I planned ahead better and have secured 10kg of unprocessed lard cuts. I'll have to render the fat myself and i bought more than I needed, so that in itself should be a fun project. This year I'll show up again, with 4kg of whole piece porkshanks and enough lard to cook into schweinhaxe.

Idk, I followed a recepie I found and it says to cook the pork shanks submerged in lard at 100°C for 4 hours, then drain it all and let the lard drip off while the oven heats up to 250°C, pop them in for a 10-15 minute hot burn to get a nice roasted surface. Last few times I went to Oktoberfest were really enjoyable. Got to exercise my German and chatted with a bunch of locals each day. Just go during the weekdays and treat it more like "I've got four hours to go relax and chat with people," and not "I have 12 hours to get absolutely hammered."
