It's basically the British version of a dutch baby pancake. "Pudding" historically referred to sausage or similar foods stuffed and cooked in a casing of stomach or intestine. Over time it shifted to refer to various other sweet and savory foods, apparently without much reason. I'll admit I don't fully understand what "pudding" means in bongalize, but if yorkshire pudding - obviously a form of quick bread - counts as a pudding, then a loaf of...pudding...that very clearly resembles bread, made from oats and suet, is also a de facto bread. I also don't know if "stuffing" has some special meaning in olde English, but every stuffing I've ever encountered is literally made from chunks of bread. It's bread. It's all bread.
