I find their Peru beans on the fruity side, but balanced and mellow. The v60 today was kinda grassy/herbal but in a nice way. Gentle acidity in the background that took me a while to notice. Beans were freshly roasted today.
Kinda fixated on the herbalness of it.
I wish I could find a kettle that isn't an expensive Hario but still has temp control and gooseneck spout so I can do more pourovers at home. The cheap stuff on Amazon always has this one review that points out a critical flaw that kills any desire to order it

The ultra cheap immersion + filter setup:
>thrift store grinder (Cuisinart DBM-8C)
>thrift store french press
>jar
>tea strainer
>drip machine papers that I had lying around from I don't know where
>wooden fork from Costco food court, not pictured
>kitchen scale (Starfrit), not pictured
>timer: smartphone, could have just as easily used the old Casio watch my dad gave me
>saucepan and stove to boil water, not pictured

Recipe:
>45g coffee
>675g water

>bring water to a boil and keep it at a boil throughout process
>rinse paper filter with hot water
>grind coffee on mark 5 (4 clicks from the finest setting)
>add coffee into french press
>add 250g water, stir vigorously, and steep for 3 minutes stirring vigorously at 1 minute and again at 2 minutes
>after 3 minutes push plunger down halfway into liquid and slowly pour through filter into jar
>repeat process, but with 250g water
>repeat third time, but with 200g water
>swirl coffee in jar and pour into mug

Tasted pretty decent. A bit sour which I found strange considering the grind setting and the amount of fines produced by this cheap grinder, also the fact that standard french press brews at this setting tasted slightly bitter. Next time I'll grind 2 clicks finer and give it a bloom. Overall pretty good given what I had to work with.

I wound up buying an OXO as a middle ground around Black Friday, would recommend if you can find a coupon. Was very wary after some reviews, but they sent me 2 which made me figure if one breaks I could use the second. I need help with my espresso shots. I must be doing something wrong but I don't know what and I just need someone with more experience to point it out.

My shots are always sour. I have a Brevilla Barista Express. I bought beans from the local nice coffee shop that are specifically roasted for a typical chocolatey espresso. 19g on the scale, grind setting at a 6 on the machine. Machine is pre-heated for 10-15 minutes. I bought the Crema distributor tool and the palm tamper.

My goal yield is 19g in, 38g out. I use the tamper and the bed is perfectly level with Breville's razor tool, but when I hand-tamp I tamp it more. I time the preinfusion to 8 seconds, and then start the main infusion. No drops of espresso come out during the pre-infusion. The pressure spikes to about 1 o'clock on the machine's gauge, just above "ideal espresso" range. The first drops of espresso are very slow, but flow rate goes up some as the shot progresses. I need 45 seconds to get 38g out.

The shot is sour, but not unbearably so. But shots are sour when underextracted, so I increased grind fineness to 4. The shot pulled almost identically, and was possibly even more sour. How do I make the shot less sour? Am I doing something wrong in this process?

larger particles tend to extract further in the same amount of time. water penetrates them longer. its more so about getting the sweet spot once youre really almost there. if its still sour or more sour after grinding further, go back a few clicks instead and see how the flavor deepens. i often get this issue when brewing new beans in my moka. since the roast is never exactly the same theres always gonna be a little fine tuning needed.im always certain when the batch comes out sour, the grind was too fine.its your biggest control factor imo

Among other things manual pulling of the shot helps. My shots were always not good on my breville barista pro until I started manually pulling shots by holding the button for a manual preinfusiin of a few seconds, let go to begin extraction then pressing and letting go of button once I reach 2x gram yeild as compared to the beans in..then Itll end up with a few extra grams of yeild as the machine stops extraction when you press the button. Everywhere I look online people pour boiling water into the coffee. However, I've been making my coffee "Turkish" style and putting the grounded beans into a pot and boiling it with water.

Experimentally I went as fine as grind 2 and a PI shot still barely touches 6 bar before dropping. So I have tried pulling regular shots and while the pressure is more at that 9 bar mark the shot is very fast at around 10-15s, producing very sour shots again. Most people buying them will never get past that stage and aren't interested in anything other than dark roasts. You're $1-$200 away from getting a much better (hand) grinder than what comes with the bbe and upping your experience significantly. If you don't want to drop for another grinder yet, just make sure yours is adjusted correctly. Move to a single dosing workflow for consistency. Weigh, grind, weigh.

Yep, but so should nearly every other machine. Shitty delonghis, gaggias etc advertise a "15 bar ITALIAN GRADE PUMP" and they're not adjusted in the factory. They run high and people have to mod their overpressure valve to drop it lower or run a dimmer etc. You've functionally done this without any modification. The owner told me that since they’re a very small roaster (Torrefazione in Italian means a bar who roast its own coffee for consumption to the public and sale) they don’t have fixed dates so they roast as needed.
Pic related (not mine) is what you see when you enter the torrefazione, they have these big distributors filled with all the coffee they have on sale (they also have readily available Jamaica blue moon and several other luxury coffees such as Kopi Luwak that you can also have as 1 cup only of espresso if you ask) and when you order they fill your bags and roast new coffee when they’re low on the quantity inside the distributors.

It’s the same as Torrefazione Continental so don’t expect giga fresh coffee roasted on demand twice a week like Trabatti and Caffelab do.

Fun fact: Hodeidah, like Torrefazione Giamaica caffè, use a prewar machine from the 40s to roast coffee and theirs is powered by coal which is based as fuck because it makes leftists seethe.

I got 2 of my single origins roasted yesterday but they substituted one coffee I ordered (an Etiopia Sidamo) with a similar African coffee (Rwanda) because they were out of it and the owner gave me that one because the new Sidamo will be roasted in 10 days and he will give me a bag for free for the inconvenience once it’s ready.

So, in conclusion you need to know when they roast to get the freshest coffee possible, that’s why it’s better to go there in person buying.

Next time when I have more time I’ll go there and only buy fresh coffee, this time since I asked for the delivery I bought coffee for the whole month.

Let’s vacuum seal it and freeze these beans now.

I've been frying my brain with caffeine for so long i am not really sure if i have been self medicating because i was an ADHD tard already or if i made myself one by tweaking too hard on coffee and i am just coping because i can't unfuck myself.
