>Ah, so you ran out. That does tend to be a problem. You should inform your sauce-melier immediately. But fortunately... (wink & smile, reach inside jacket)... I always carry my own.

It's important to have this conversation loud enough for all patrons to hear.

Leave the bottle on the table with the logo facing outward. Before each bite, make a big show of opening the bottle, extracting a single drop of "red gold", and closing the bottle with a loud snap. Also frequently exclaim (to no one in particular) "Mmmm mmmm! That's my 'Vark!"

If anyone looks over, be sure to smile, wink, and hold up the bottle, in case they want to take a picture for social media. Of course you'll also want to get your own photo showing the bottle next to your meal and yourself leaning in, mouth agape at the zesty spice. (Don't forget to tag #varklife! One lucky winner this month will get a limited-edition Secret Aardvark® Nintendo Switch!™)

Last but not least, when paying the bill, on the "tip" line, write:

>'Vark goes great on 'za! :^)

Some of the sauce websites have also small brick & mortar storefronts, which is cool if you're local to avoid shipping costs... but it's a really niche business. We are fortunate to have one nearby, run by a couple retirees in a run-down suburban strip mall, probably not too expensive to keep going as a hobby/vanity business... but I doubt the storefront will still be open in 5 years. So yeah, for anything beyond supermarket sauce, online will continue being the way to go for most people.

>April 12, 2023
>Uncle Ulcer’s Maximum Alert Ghost Pepper Gastrointestinal Genocide, first tasting
>I found the bottle art to be quite clever and humorous, although I could see how one might be shocked by an anthropomorphic chili pepper in a Wehrmacht uniform shoving the nozzle of a flamethrower up a man’s rectum and blasting it with fire - perhaps they could change it to a generic uniform so as not to offend our Semitic friends.
>A local eatery is featuring the sauce on their chicken wing offerings. I took a seat at the bar and ordered a dozen, and a Gutpunch Hopfuck IPA from Motherhumper Brewing (I typically would not get something quite so hoppy to accompany the main course but I was feeling bold this eve). A family with ugh… THREE children was seated in the dining area behind me. I attempted to register my disdain by glaring menacingly over my shoulder at the parents but their attention was focused on their spawn. I politely requested the barmaid reseat me at the end of the bar.
>The plate arrives. A neon orange-reddish sauce glistens on the wings. The scent is rather pungent, it stings the nostrils. I raise my glass and nod to a young lass a few seats away. She rolls her eyes and goes back to staring at her phone. I pick up a drumstick and take a small bite. The taste was… underwhelming. I had expected something more… flavorful from Uncle Ulcer’s, but all I can sense is pure capsaicin. Fire and needles spread throughout my mouth and down my throat, swear begins to bead on my brow. I whip out my pocket square with a flourish and dab my forehead. The woman a few seats down now has her back completely turned to me.
>A few minutes have passed and I have not taken another bite. I have emptied my pint and am halfway through a glass of milk, courtesy of the barmaid. She has politely but firmly rejected my request to exchange the wings for another dozen in a different sauce. I tip my hat and bid her good night.
>Final score: I rank the sauce a 6/10.

>Grab The Toilet and Scream Hellfire Habanero, second tasting
>Few actually know the proper name of this sauce as the label is rather understated; it is completely black save a crude graffiti-style middle finger stenciled on the front and required FDA information on the back. Mother won’t allow me to display this on the kitchen spice rack with the other highlights of my collection for obvious reasons.
>Ron, my mother’s suitor of the month (I am forgoing his usual moniker of “he who shall not be named” for brevity) has brought pizzas for us to partake. I offer Ron a pint of Hazy Longsipping’s Imperial Tangerine NEIPA but he rudely rebuffs it in favor of his macro piss lager.
>After some idle smalltalk about my less-than-fruitful recent attempts at job applications and the opposite sex we arrive at the main course. Ron reaches for a bottle of tabasco *sigh* (mother keeps one on hand for cooking). I say I prefer something with a little more masculinity and proudly furnish the bottle of Hellfire Habanero.
>Mother sneers and rolls her eyes. “He’s gonna kickstart his IBS again with that crap.” I pour a small dollop of the brownish orange liquid on my slice and savor the aroma, very industrial with a floral hint. I take my first bite. Being my second tasting I was more prepared for the fiery front it put on and push through the second and third bites. The burning did not subside. Ron offers a paper towel to wipe the tears from my face. I ignore him and finish the slice. My stomach begins to rumble and churn almost instantly.
>I do not feel a rating would be fair as dinner was cut short by medical issues, but I will say the sauce lives up to its namesake. I have been on the toilet for nearly two and a half hours. Mother and Ron have departed for a movie, leaving me to a solitary evening of agonizing bowel movements and anime.

Oh thank god, spicy shit has a general.
I'm looking for one ingredient to complete my light night snack, and it has to be really hot shit "painted" on a razor thin piece of sharp cheese on top a small cracker. Last time I did this I used Blair's Afterdeath Sauce, and it was the amount of heat I wanted but the flavor? I suppose it had some, but I hadn't noticed.
Hot shit on thin cheese on a cracker- what's good? I like it when my face tingles.

Runner up is Crystal, the cheaper, cruder Tabasco.

Hot sauce people hate "vinegar forward" hot sauce for the same reason that coffee people hate anything that isn't a fermented light brew from a weird location: it all tastes the same. >Excuse me, miss? I asked for hot sauce. Yes, I can see you’ve brought the condiment holder. Yes, I can see there is a bottle of tabasco and a bottle of cholula in it. No, these are not hot sauces. I would expect someone in the restaurant industry be able to tell the difference between hot sauce and dressed-up vinegar. Hot sauce, do you have any on the premises? Check with your chef, it’s fine, I can wait. An example of what I’d be looking for? Well, I’m sure even the most modest of establishments will have a bottle of Professor Poopenfire’s Sphincter Scorcher, but as I was greeted with more than a series of grunts and howls when I walked in I would expect nothing less than Satan’s Taint Sweat Carolina Reaper Deluxe. Do you need to write this down? It’s just that you seem a little dismissive. No, the Jalapeño Bacon and Buffalo Chicken Mac and Cheese is fine, and by “fine” I mean that it’s edible. But I need to elevate it with the proper sauce. As you can see, my eyes are not watering and my glass of milk sits untouched. Hot sauce, miss. I require hot sauce.

CinSoy's spicy chili crisp is pretty good. Hell, trading away some of the convenience of liquid for any kind of chili crisp or salsa macha is probably going to taste far better than most hot sauces if you're after flavor
Truffle hot sauces are a meme though. They're not as spicy and have a funk to them which isn't bad but it does skew it into tasting like pasta sauce.

>Hot Sauce
Begin with a mixture of dried chillies of your choosing. Here I am using Arbol chilies, guajillo chilies, and bhut jolokia.
The arbols and ghost peppers will provide the heat and tart flavor, the guajillo chilies will impart a smoky richness.

Cut off the stems, empty out the seeds (it's a myth that they contain the most heat).
Bring a pot of water or a kettle to a simmer, just under boiling.
Lightly toast the peppers in a dry pan until they are fragrant.

>> No.19601316

Once the chilies are fragrant and the water is simmering, take the chilies in the pan off the heat and pour the simmering water over them. This mixture will sit for 30 minutes.

Once 30 minutes are up, you will note that the water has become infused with the peppers and taken on a deep red color.
At this point, chop some raw garlic, as much or as little as you want.

Now for the blender. Take your soaked peppers and only about half of the soaking water. Mix with enough white vinegar that the smell of the peppers starts to sting your nose. Add the garlic and a few pinches of salt. Blend on high.
