Oh, another fav is Repo and Sfumato. Its probably the only cocktail with Sfumato that's any good. Works well with Sotol as well. You definitely need a grassy liquor to pair up with the Sfumato. I find Espolon Repo is nice and grassy, but Desert Door Sotol is even more so. It ends up tasting like a fine cigar made more palatable with some grapey sweetness.

I would get the Dolin stuff, as far as vermouths go. Lustau is probably good too, I've had there sherry wine and liked it a lot. Don't get martini, it tastes the cheapest in my opinion. And get the cointreau, it's a staple. Never heard of metaxa but if your heart says yes, do it.

if i were you, I'd get a small mesh strainer, literally refines your cocktails and will make everything you make smoother. Get a citrus peeler (either channel or a potato peeler) and some bourbon cherries (this is my regeional variant of preserved cherries in syrup, use what you have on hand) since old fashions, the drink you mentioned later, gets half of it's appeal from the orange peel in it and the cherry at the end. Also get a citrus juicer and some bottles. Learn to make simple syrup (as implied it's not complicated) and maybe keep some olives, and citrus for other garnishes.

with this set up and everything you've listed you can make full fledged:

also get the makers over the jim bean. There is a popular phrase that goes "Dont party with Jim Jack or Jose" which means dont drink Jim Bean Jack Daniels or Jose Cuervo because they taste bad and give you worse hangovers.

You should try Remy Martin for congac, it's popular (maybe overly so) or just look out for the VSOP versions of what you already drink since they're usually the better congac. I went to Mexico once and they old me Jose Cuervo is almost not even tequila since it strayed from its recipe years ago to make more money. I don't drink a lot of tequila so no recs here. Really listen to >>19568597 on not getting Martini brand vermouth, or anything made by Gallo. It's just trash stuff and if you get bad vermouth you are destined to "ruin" around a third of the classic cocktails. Vermouth is tricky since we really only drink it mixed.
Vermouth might not go bad but I think its taste will change over time and it should be stored cool after opening, so buy appropriate sized bottles.
The same general principle applies to most of cocktails, that a weak component can ruin the drink, I just think vermouth and any other herbal really stand out when they are weak.
The standards are Noilly Prat for dry and Carpano for sweet. On your link the dolin or cinzano should be good, and I buy punt e mes (a carpano) sometimes.
Also in general watch for outliers within groups, like for example makers is bourbon but it's a very sweet and light profile and quite different from 'standard' bourbon flavors.
Get what you like though, it's likker so it's not going bad, just taking up space. Last thought on that is cocktails can have a 2+2=5 effect where the end product really is its own thing, long Islands come to mind.

Are you just overloading the wash with too much sugar? Or using a tolerant enough yeast? One of the "secrets" to making a good wash is to target a low ABV compared to the yeast's tolerance so it isn't stressed at all (and low here is relative, like 8%)- the cost is water and a longer boil or more runs. Sugar wash stalling could also be a nutrition issue, though cider has similar nutrition problems. Turbo yeasts should have little problem but I wouldn't use them because they make weird flavors and are resilient enough to come back to life on subsequent batches like an infection.

I do a TPW: I use 12 to 14 pounds of white sugar and lemon juice (or other acid) to create 5ish gallons of invert sugar and add 170g of tomato paste and a yeast (4g packet) with a good tolerance like a champagne or cider yeast, rs premier blanc for example. Target is around 1.06 og and should end at .990 to 1 for about 9% ABV. I make the invert sugar in my still boiler which is electric and convenient and with just enough water to get all sugar to dissolve, and is probably a skippable step.

Anyway more water, adequate nutrients.

I can second this as solid advice. This is pretty much how I started a few months back. My way in was white russians. They're still one of my favourite drinks to make because they're easy and are really nice. Another easy to make, but nice drink is another stirred drink called a Revolver.
All it is is 2oz bourbon (goes in a lot of drinks and a good one is typically inexpensive, I use Buffalo Trace or Woodford Reserve. Understand I'm a bong, so our off the shelf choices of bourbon aren't what Burgers have) 1/2oz of coffee liqueur (I use Mr Black, but use whatever is better for you) and 2 dashes of angostura orange bitters. Mix with ice in a mixing glass or just a pint glass if you've not got a mixing glass, and then strain into a Martini glass or whatever coupe you may or may not have.
Spritz a orange disc over the glass and drop on the surface of the drink. I've served these to multiple people I've had over now and they enjoy them. Super easy to make, better to drink.
That is, of course, if you like coffee liqueur and bourbon.
