Experiment with things in your house. I made curry the other day and added tumeric, curry powder, various herbs, sweet chilli sauce, bbq sauce, a lot of garlic etc. My Japanese fiance hates it when I add all that, but my sister said it was the best thing she'd ever had.

Also try adding different vegetables. Pumpkin, asparagus, eggplant, mushrooms etc all go really well in there. Japanese sweet potato too but you might not be able to find that.

For this one I bought a rotisserie chicken from the supermarket, shredded it and added it to the curry while it was cooking. And instead of throwing the potatoes in the curry I roasted them and poured the curry over them. Then I doused it in habanero powder
