How do I make it soft & fluffy?

I'm spitballing my own recipe tomorrow to my own tastes & needs (I eat anabolic food) so it will go roughly like this:

>few bananas
>rolled oats (undetermined how many grams)
>tigernut flour
>2 eggs
>almond milk
>whey protein scoop
>walnut pieces
>raisins
>baking powder

anything I am missing? ratios? I'm going for 1500 calories total since it's being shared.

Fuck no. I'm not a raisin hater but it doesn't belong in banana bread. Do chunks of banana instead. Chocolate chips are good too but I'm guessing you don't want that. If you must use raisins be sure to soak them in hot water, preferably overnight.

If you want to use these ingredients and virtually no fat, you're better off just making cookies or bars. There's no way to get a satisfying banana bread with these ingredients.
I make healthy "cookies" often and they're pretty good. Just make sure to use enough cinnamon/nutmeg and a little clove.
