I don't have one but I don't normally go the super creamy route. I use potatoes, bacon, some shredded carrot and maybe some chopped broccoli. Add cream, cheese and/or sour cream to your liking.

In the past, my cold winter night easy goto has always been Beau Monde'd chicken thighs seared in a large covered pan with barley, garlic, onion and fresh vegetables like carrot and celery and some mushroom ketchup.
Paired with a slice or 2 of toasted sourdough or homemade wheat with a nice Jarlsberg slice melted on them rounds it out nicely.
I'll have to try Oxtail and barley next fall. seems like it would go well with tomatoes in the barley too.
