"Cereal" such as buckwheat, oats, corn/corn meal are boiled in pork broth. Hence "pork" cereals. Lot of fat and gelatin in what is generally made and sold in North Carolina but I understand some areas are a bit different. It's not terrible but I prefer livermush or liver pudding over scrapple. Certainly better than C-loaf or souse.
