Normal muffins have a ratio of 2 parts flour: 2 parts liquid: 1 part egg: 1 part fat but it's all confused because ice cream is replacing the non flour portion. Just going by the ratio you'd expect 1 cup of flour so I am thinking 1.5 cup is the closest reasonable guess.
