ok faggots listen up, take your sliced corned beef (more than 1/3lb and you're destroying the proportions, just make 2 sandwiches if you want more) and give it a head start in the pan on both sides, next put your cheese on top and let it start melting
then build the sandwich and top with the kraut
then you put the whole sandwich in the pan and toast it up like a grilled cheese, you can press that sucker if you like it more crispy
then when its ready you peel back the top piece of bread and put your COLD dressing on it, then close it again
that'll give you a contrast of temperature along with the contrast of textures with the crispy toasted bread and soft melty cheese and beef
