What are your ultimate fried rice tricks?
For me it's:
>Scrambling the eggs or make a rough omelette cut in pieces before adding them to the rice
>A little bit of thai red curry paste and lots of sambal (chili paste)
>Frying everything in bacon fat and using the crispy bacon as a topping

Dont make a rough omelette, make several French style, super thin "egg crepes", seared just a couple of seconds in a super hot pan and cut those into pieces. Much better taste and texture.

None of these jokers are right, if you want a truly good fried rice you need to make it denver omelette style and let it rest so that the juices get reabsorbed, then chop down to finely and add at the very end.

For cooking in a nonstick pan on a standard domestic stove. Make an omelet, put it on a plate and chop it up with the spatula. Refrigerated rice from last night is usually stuck together in a brick. Break it up by hand before adding to a well oiled pan. Toss the rice in oil immediately to coat it, then keep tossing every once in a while. Add frozen peas and carrots and a small amount of butter, keep tossing. Add eggs, keep tossing. When you're happy with how crisped the rice is then add in salt, msg, and pour in a couple tbsp of light soy sauce into the pan - such that it immediately sizzles and evaporates off. Keep tossing till liquid is gone then serve
