If that's how the moka behaves normally, by design, then I'm ok with it because I enjoy the coffee it makes.

The only thing I need to know if...this is how the pot was designed.

I saw the video and the funnel sits almost tight but it moves a bit, I wouldn't say that it needs to be corrected but then again of the other 2 Giannina pots I saw all their funnels were the same as mine.

Is PTFE safe in contact with the boiling water I end up drinking? Isn't it cancerous? Maybe a food safe silicone ring would be better?


I also wrote to Giannini to seek their POV on the issue, since the pot has a 10 years warranty. Let's wait and see.

If I'm not working I usually drink coffee that coincidentally happens to come out to to almost the same dose of beans per day irrespective of method. I flop around between espresso, flat whites, and filter; at the moment I'm not drinking filter coffee so I tend to make a bare shot with 16.5g first thing, then a little later a second shot in a flat white. If I drink filter, I'll brew 34g at 17:1 and drink it over 20-30 minutes in 160mL cups because I like spreading it out over smaller cups and I like seeing how the flavour changes as the temperature does. If I'm working that day I'll start the same but inevitably probably end up drinking a cup or two of shithouse instant depending on how late in the day we're working.

I'm no material scientologolologist, but from what I've seen in kitchens with other kinds of teflon stuff, so long as it's not left on high heat open flame stuff for extended periods, it won't burn off in significant amounts. I think you could boil water in teflon for a very long time before you see degradation that would impact health. I'm also not an MD. I also don't know of any studies where scientists with applicable degrees in both material and medical degrees have weighed in. So then you get to the point of where Monsanto described babies eating popcorn (because it has high volume) as opposed to baby formula with most of its nutrition from fucking corn syrup (which is relatively dense). Plastics kind of suck. On the other hand, a lot of alloys, and their resulting oxidation may as well. IMO, you may as well be as worried about the metal that Mocha Pots are made of, for all the lack of empirical data.

I knew something was up with the brew times on this espresso machine. When the water is within an inch or two of the min line on the tank, it doesn't cover the filter all the way. If you're really having issues a week out from roast, they're way more developed than a "medium". Like I said I try not to touch my roasts for a month if I can help it/don't run out of other stuff. I have no problems, I enjoy the coffee more after 4 weeks than 1.

You need to get into the habit of freezing your beans. When I sample one of my roasts thats great, I just pull at least half the jar out to vac and freeze for a rainy day stash.

Just for another example, I paid $37.75 for 5lbs of Finca Monteblanco Purple Caturra natural in 2019. Still have a little bit stashed back since I was buying 5 to 20lbs of stuff at a time back then. A local roaster currently has the same crop from last year. $29.50usd/12oz. Fuck that. Your aussie market is obviously going to be different, but even IF you're paying a similar price for your greens(you won't), your selection just skyrockets. You're already paying top dollar for shit you don't like. You'll break even in under a month. They don't sell an aussie plug one though. You guys are 220v right? So you'll need a stepdown to 110v.

From experience, 2 week old coffee you're getting into daily is very different than 2 week old coffee that has been sealed (relatively) untouched in a oneway valve'd bag/jar. When I say rest, I mean rest. I "burp" my jars once after 3-4 days, get a smell of them, and then seal them back up to offgas slowly. If I can't help myself I'll snag out a little bit after a week or two to sample how its coming along but I try to schedule my roasts so I've always got something ready to drink. I might even try a shorter rest now that I've gotten a handle on coarser "turbo" shots.

I only vacuum seal greens I buy in 20lbs bags and stuff to freeze. I'd freeze my greens too I just don't want to sacrifice any more freezer space. I think my goal this year is to not end up buying the weber dosing tubes. I'm sure they'd be great for feeding into the wug, I just don't want to spend the money. That's money I could be wasting on $200 sworks baskets. I even had them bought and paid for on the Key preorder I cancelled. We'll see what happens.

CL tubes are plastic with a shittier lid. The webers I had ordered are glass with a much nicer lid and valve. If I was going the cheap route I'd just buy a bunch of centrifuge tubes. $15 for a rack of 25. No valve but I might just snag them to freeze single doses in the meantime.

I know. That's what I ran for the last three years. I wanted to mod some more robust hardware and that $79 popper* has it. Fan, heater, and chamber are way better built than the $20 sweet maria's popper.

I measured the upper filter to see if I can upgrade to the E&B filter.

The E&B (3 cups) has an external diameter of 57 mm and an internal diameter of 49.2 mm, so…it’s a big no.

if you clean your moka regularly, i would say no more than once a year if you really want to make sure its in tip top shape.

i have had my E&B one for over a year and its in perfect condition, not peeling away.
also i could be wrong but i dont think the internal diameter matters, as long as the gasket fills the gap it should be fine.
