Maybe I'm used to tweaking but I find Kenji's stuff to be reliable. If you watch his videos you get a better idea of how he likely intends you to cook; season to taste, omit stuff if you want, go by indicators more than time/temp suggestions etc.

Nobody, if you're following an eceleb or any celeb for recipes, you are a shit cook. If you're just learning or just want ideas there are some good resources to keep an eye on, but by the time you have the absolute basics down the only time you should be following a recipe is if you want to try something for the first time that you've never made, and you should just Google what you need and look for the least retarded one you can find.

Chef John is the gold standard for going from zoomer retard to zoomer retard who can cook himself a meal that's not dogshit. Internet Shaquille is a pretty good source of general kitchen advice and inspiration, and he openly mocks wannabe celebrity chefs like babish and the like, so that's always fun.
