If you're really particular about your rice, or if you're a major foodie and want to experience your rice in its (arguably) most delicious state, a donabe might be worth it. For me, I find it much more convenient to throw the rice and water in a rice cooker, set it, and go take care of other things around the house with the peace of mind that it'll be cooked well and warm no matter when I go to eat it. Tey both have their pros and cons - just depends on your personal needs and priorities.

Surely mirin and sake will be available at your local grocery stores unless if you live in the middle of nowhere.
Whole foods usually has kombu.

I recommend dried mushrooms. Shiitake mushrooms are most common in Jap cuisine but any dried mushroom will taste basically the same. But you can probably find dried shiitakes at your regular grocery stores too.

Other stuff that you should check your local stores' inventory for are panko breadcrumbs, miso paste, ramen noodles, and udon noodles.

tonkatsu/chuuno/okonomiyaki/yakisoba sauce. you can make your own using worcestershire sauce, soy sauce, starch, sugar, and other common stuff. japanophlies will tell you they're different, but they're pretty interchangeable.
ginger
rice vinegar. can use for pickled ginger as well. can use as an ingredient for jap mayo if you don't want to buy that overpriced shit.
you can use dashi that comes in packets but aren't as good.
they often use starch by itself or with flour when frying stuff.

yeah dried mushrooms are for making stock for soups, stews, or curry.

What you do is you put the dried mushrooms into a bowl of hot liquid (you can use water but I like to use chicken or vegetable stock), cover the bowl, and you let the mushrooms soak in that hot liquid for at least 20 minutes. Then the mushrooms will be rehydrated and soft, and the liquid will be strongly flavored and highly delicious mushroom stock that you can use for making soup or stew.

No brands come to mind. I usually just get whatever noodles look good at the store.
When it comes to ramen noodles (not udon noodles) though I make sure to look for ones that have alkaline salts listed in the ingredients because if they don't have alkaline salts then they aren't ramen noodles.
Alkaline salts used to make ramen noodles are any of the following: sodium carbonate, potassium carbonate, potassium bicarbonate, magnesium sulfate, magnesium chloride, or calcium chloride.
Udon noodles don't need to have alkaline salts but ramen noodles should have them.

Our family is kind of weird. We put the fat in and after it renders we cook one piece of meat each, and eat it with no sauce or anything (ostensibly to gauge the quality of the meat). Then we load up the nabe with the veg and sauce and whatnot and boil it down a bit before adding the meat. That's the stage I snapped the picture at. There's a plate of beef and bottle is nihonshu just out of frame.
