made it drunk so the recipe won't be exact. browned pound of pork mince (would use beef but didn't have any) with about 100g of very finely minced bacon till all the water evaporated. set that aside. cooked onion in the leftover grease till soft, add lots of garlic. now what i think makes it the best is using lots of different peppers. i finely chop fresh sweet red and green peppers, some pickled peppers, roasted peppers, maybe some jalapeno or one of those small red ones for heat. roast those in the pan for a bit. add a spoonful or two of tomato paste then deglaze with some beef stock, add tomatoes and cook them for a bit till you can easily smash them with a potato masher. now i added the meat back in + the spices and herbs: sweet paprika, smoked paprika, chipotle powder (again i think the amount of different variations makes it the best), chili powder, cumin, oregano, garlic powder, coriander, just a little bit of cinnamon and nutmeg and a half piece of dark chocolate. let it simmer for at least 2 hours stirring occasionally and top up with beef stop whenever it gets too dry. personally hate beans but if you like them i'm sure they'd fit right in
